Opilio Snow Crab

Each winter, crabbers leave from Seattle and Kodiak and head to the Bering Sea to harvest their annual quota of Opilio Crab or Snow Crab. The crab is harvested in large pots and brought ashore to Dutch Harbor and St. Paul. The crab is sectioned, cooked in a light brine solution and then frozen. Opilio/Snow crab meat is light, sweet, tender and mild tasting.

Opilio Crab is sold in sections that include four walking legs, a claw and the shoulder. The sections are smaller than King Crab, weighing an average of 8 ounces each, so two sections per pound. Plan on ordering at least one pound of crab per person for a main meal, although once you try it, you might want to consider doubling your order!

Because the Opilio crab is already cooked, you only need to steam or boil the legs to reheat. Some prefer using seasonings like Old Bay or Zatarains Crab Boil to spice up the crab. Consider melting butter or even adding garlic to the melted butter and dipping your picked crab meat for a simple but delicious meal.
