6 dozen tortilla chips
½ cup sour cream
3 tablespoons mayonnaise
½ cup chopped green onions
1 (4 oz.) can chopped green chilies, drained
¼ teaspoon ground cumin
1 pound crabmeat
Salt and pepper to taste
2 cups shredded sharp cheddar or Mexican-blend cheese
Preheat oven to broil. Arrange tortilla chips on baking sheet in a single layer.
In a bowl, combine the sour cream, mayonnaise, green onions, green chilies, and cumin. Carefully fold in the crabmeat, and add salt and pepper to taste.
Spoon mixture onto chips. Sprinkle top with cheese and paprika.
Broil until cheese is melted about 6-8 minutes, watching that the nachos don’t burn.
This recipe can easily be modified to your own preferences. If you would like a lighter, healthier dish, you can use low-fat or nonfat sour cream and
mayonnaise, reduced-fat cheese, and baked tortilla chips. You can also add other nacho toppings as desired.
