This scrumptious greek salmon salad is not only delicious but healthy as well. According to the American Heart Association,
omega-3 fatty acids are excellent for the fight against cardiovascular disease. They suggest consuming fish such as salmon, at least two times a week.
You will discover it is easy to do, after preparing this delicious dish below.

 

Ingredients

1 pound skinless King Salmon

1 1/2 tablespoon olive oil

salt and fresh ground black pepper (as needed)

1 head romaine or iceberg lettuce, chopped

2 large tomatoes, diced

1 cucumber, peeled and diced

1/2 cup thinly sliced red onions (soak in a bowl of ice water for 30 minutes and drain to remove harsh bite)

4 oz feta cheese, crumbled (regular or light)

black & green olives (optional garnish)

1/2 cup roughly chopped walnuts (optional)

non-stick cooking spray

Tangy Lemon Dill Dressing

1/4 cup fresh lemon juice (plus zest of one lemon)

1/2 cup extra virgin olive oil

1 tablespoon dijon mustard

1 teaspoon honey

1 1/2 tablespoon chopped fresh dill

2 medium cloves garlic, minced

3/4 teaspoon oregano

salt and fresh ground black pepper (as needed)

Note: This dressing can be made ahead of time and refrigerated.

Instructions

* Heat up a grill pan over medium-high heat. Coat both sides of the salmon with olive oil and season with salt and black pepper.

* Spray grill pan with non-stick cooking spray.

* Once the grill is hot, add the seasoned salmon into the grill pan.

* Cook the salmon uncovered 8 to 9 minutes on each side. The texture should be flaky when tested with a fork. The final temperature should range between
130-140°F.

* Remove salmon from grill pan, setting it aside to let it cool slightly.

* Using two forks break the salmon into large pieces.

* Meanwhile, in a large bowl combine the ingredients: lettuce, tomatoes, cucumbers, and onions. Set aside.

* To make the dressing, place in blender the ingredients: lemon juice, zest, olive oil, mustard, honey, dill, garlic, oregano, salt and pepper to taste.

* Blend for 45 seconds. The dressing should be thoroughly mixed and slightly thick.

* Pour enough dressing into the large bowl to coat the lettuce, tomatoes, cucumbers, and onions to your satisfaction. Toss thoroughly. You will have extra
dressing left.

* Evenly divide the salad into four bowls. Top with salmon pieces, feta cheese, olives and walnuts. Drizzle each bowl of salad with more dressing. Bon
