This Healthy Salmon Chowder recipe comes to us from the local Kodiak Area Native Association (KANA). Salmon is one of the most important and frequently used traditional food sources for native Alaskan peoples. Wild caught salmon provides a healthy protein source, rich in vitamin B and high in Omega 3’s.
3/4 cup diced onions
3/4 cup peeled and sliced carrots
3/4 cup sliced celery
1/4 cup diced green pepper
1 clove garlic minced
1 cup chicken broth
2 large potatoes, diced
1/2 teaspoon dried dill
salt and pepper to taste
1 small zucchini diced
1 can sweet corn
1 1/2 cups evaporated non-fat milk
1 large sockeye or coho fillet in bite size pieces. (Fillet should be skinless and boneless – weight 1.25 to 1.5 lbs)
Cook onion, carrots, celery, garlic and green pepper in 1/4 cup of chicken broth until tender. Add potatoes, dill, salt and pepper plus remaining broth. Cover and simmer for 20 minutes or until vegetables are tender. Add zucchini, simmer for 5 minutes/ Add corn, milk, salmon and heat thoroughly. Serve with a good crusty French bread.
