Keep your family happy and healthy all at the same time with this oven fried halibut recipe. It’s the best of both worlds with a crunchy outside and a
tender, white inside. Throw in some colorful carrots and broccoli and watch the whole family sit down to a new favorite meal.

Ingredients:

1 Cup Panko breadcrumbs

1 tablespoon chopped fresh parsley

1 tablespoon basil

1 large garlic clove, minced

1/2 teaspoon onion powder

3 eggs – beaten

1/4 cup flour

6 halibut fillets

3 tablespoons olive oil

1/4 cup flavored vinegar

Salt and pepper

Preparation:

Preheat your oven to 450 degrees Fahrenheit. Use a shallow dish to combine the breadcrumbs, parsley, basil, garlic clove, and onion powder. You’ll need
two additional shallow dishes, one for the eggs and one for the flour. Set all three dishes up as if you were creating a miniature assembly line. Sprinkle
the halibut with salt and pepper and then coat the fish with the flour mixture, then the egg mixture, and finally the breadcrumb mixture.

Add one of the tablespoons of olive oil to a skillet over medium-high heat. Taking two halibut fillets at a time, place them in the skillet. Cook until
browned on each side. This usually takes about two to three minutes.

Cover a baking sheet with foil and spray with cooking spray. Place the browned halibut on the sheet.

Repeat this process two more times.

Bake all six halibut fillets for 6 minutes at 450 degrees Fahrenheit or until flaky.

Add the flavored vinegar to the skillet still over medium-high heat. Thin the mixture with a little water and drizzle over the halibut before serving.
