The trick to good seafood pasta is starting with quality ingredients and keeping the process straightforward. The more mixed up the cooking gets, the more
likely it will come out less than stellar. This recipe for White Sauce Crab Spaghetti is a simple and delicious meal for any level of chef, and is
great for a spring or fall meal, especially with a white wine choice for an outdoor evening sitting. White sauce pasta can be hard to master, but when
done right, it can be a great start into more exotic Italian food beyond just tomato-based sauces.
- 2 Tbs butter
- 1 small onion, finely chopped
- 2 Tbs flour
- 8 oz clam juice
- 1 cup half-and-half cream
- 12 oz fresh crab meat
- 1/2 tsp garlic powder
Begin by bringing a pot of water to a boil and add the spaghetti. While the pasta is cooking, get a separate pan and melt the butter. Be careful not to
burn the butter, most folks use a medium heat to avoid this problem. When ready, take finely chopped onion and mix it into the butter. Swirl this
around for about five minutes. Add flour and cook for about another minute, then add clam juice, half-and-half cream, crab meat,
and garlic powder.
Take the entire mix in the pan and heat it to a boil. The pasta should be ready by now, so drain it and then put it back in the pot. With the cream mix
now boiling, take it off the heat and mix it thoroughly into the cooked spaghetti so all the pasta is covered. Add in some cilantro or parsley
if needed as a garnish.
